COOLSVILLE CARTEL is a small neighbourhood cafe with great coffee and delicious fully gluten free cabinet food. We have a funky selection of retail gifts, and various specialty grocery items from local producers. We make home-style freezer meals which you’ll find alongside Thoroughbread Bread selection in our chiller.

Our Roots

Coolsville Trading Post opened on May 10th, 2015 with the intention of providing more gluten free options for people on the go! Being gluten intolerant myself I was fed up with having very little options of food when I was driving or traveling and didn’t have time to sit in and dine somewhere. I was also very aware of the impact opening a Cafe would have on the environment so I decided to only have biodegradable or compostable containers for food and coffee. Small things like not having sugar packets can make a huge difference in the amount of waste we produce.

I wanted to provide a variety of things on my menu, something for everyone! We have wonderful breakfast wraps with bacon & sausages and also more than half the menu is vegetarian. I always make sure to have a few vegan options as well, and better yet, all of our food gluten free! We are very tiny and classified as a Takeaways so we only have cabinet food. I pride myself on making my food look as beautiful as it tastes!

Our Coffee comes from our friends in here in Wellington, SUPREME COFFEE. They are a cool bunch of people making a fun name for themselves and they serve some delicious beans!

The Cafe also has a small section of grocery items where you can find locally made salsa, hot sauce, crackers, and more! And don’t forget to grab one of our super popular take and bake freezer meals.

Lindsay Phillips

Canadian born & raised this hospo star has been in the business since she was 17yrs old, working in numerous hospitality venues from hotels to fine dining restaurants. Food lover, hospitality lover and dog lover; she has combined all three at Coolsville. Great food, amazing staff and dogs are allowed to hang out inside! Learning from some of the most talented and creative Chefs that she had worked alongside, she took all of the tricks and tips and applied it to the food you see in the Coolsville cabinet daily. Being gluten intolerant herself, the goal was to provide amazing grab n go food with some gluten free options, and it all just evolved from there.

 

Penny Lawrence

General Manager of Coolsville, BambuchiSan and Lindsay’s life. I couldn’t do all of this without this chick. She even takes care of my needy dog (Brisket) when I go to work! She is the left side of my brain and works super hard at everything she does. You will see her slinging coffees in the Cafe a few days a week. But mostly she is your fabulous host, cocktail maker & Chef over at BambuchiSan, our sister restaurant.
